Red Velvet Cake Bites

I made these treats to share with friends and family and boy were they a hit! These cake bites are delicious, easy to make and won’t wreak havoc on your New Year’s Resolution for healthier eating either.

They’re loaded with healthy fat and lower in sugar than other sweet and tasty treats; and as an extra bonus, we were able to cut back on total sugar used by choosing maple syrup that is more concentrated than other sweeteners, and is also packed with antioxidants.

You can also get creative with these cake bites as you can switch their color by adding different colored juice (a healthy food coloring!) and by swapping cashews for almonds or another nut.

Make these treats for you and your favorite Valentines or simply make them for a fun and easy snack or dessert.

Instructions
  1. 1. Use a food processor like a Cuisinart or a Vitamix
  2. Add cashews to the food processor and process until a fine crumble forms
  3. Add in the remaining ingredients- coconut shreds, dates, honey, beet juice, coconut oil and salt—and process until a stick dough-like consistency forms- continue to process for about 30 more seconds.
  4. Stop the food processor and roll the dough into quarter-sized balls and place on a plate.
  5. Set the plate with the cake bites into the fridge and let them harden for about 30 minutes or so.
  6. While the cake bites are hardening, make the icing by melting the coconut butter and oil together (about 15 seconds in the microwave) and mix together in a bowl with the maple syrup.
  7. Remove the cake bites from the fridge and add the icing on top then sprinkle with a little sea salt and enjoy!
  8. Store the bites in the fridge for the best shelf-life and consistency!
