Roasted Vegetables and Kale Salad

Sweet potatoes are definitely a favorite! Sweet potatoes are not only delicious and versatile, but they’re incredibly nutritious too.  Sweet potatoes pack fiber that’s good for digestion and heart health, anti-cancer ellagic acid and sun protective beta carotene (amongst other things). Sweet potatoes go well with lean proteins, other roasted vegetables, and even in salads (like this one!).

This delicious salad combines seasonal sweet potatoes with kale (loaded with b vitamins, iron, muscle healthy magnesium and potassium and more), pomegranate seeds, and almonds.

I love to have this salad as an everyday lunch- I will also usually add lead protein like chicken or salmon or have an egg alongside. One note about kale is that it tastes better when you massage the dressing into it (like with your hands!) so give it a shot!

Instructions
  1. Wash and prepare the salad ingredients.
  2. Add the salad ingredients into the dish that you will be serving from.
  3. In a separate small dish, mix together salad dressing ingredients.
  4. Drizzle the salad dressing over the salad then mix together with your hands.
  5. Serve and enjoy!
